Have you ever tried Zirbenschnaps (pine liqueur)? At our hotel, it’s one of the special highlights you shouldn’t miss. Our Zirbenschnaps is something truly unique – crafted in-house by none other than our chef Dani. From harvesting the cones to the first tasting, everything is in his skilled hands.
The Story Behind Our Zirbenschnaps
Every year, around July, Dani sets off to a very special location – one we’re keeping secret for now – to harvest the pine cones. He climbs old Swiss pine trees to pick the most beautiful cones. This task requires not just patience and experience, but also a head for heights and a touch of adventure. Honestly, we think that’s exactly how it should be – if you want something from nature, you’ve got to work for it a little. Don’t worry, though: the effort is well worth it!
The Process – Turning Pine Cones into Schnaps
When Dani and his friends return to the valley with freshly picked cones and begin the process, the spicy, resinous scent of pine fills the entire hotel – a teaser for what’s to come. The cones are carefully sliced and then soaked in strong grain alcohol. Over the course of several weeks, the schnaps absorbs the unmistakable aroma of the pine and gradually takes on a deep reddish-brown hue – perfect as a decorative element in any restaurant!
After about six weeks, the moment arrives: The schnaps is strained and ready to enjoy.
